I made some Japanese food the other night from a recipe I got from a Japanese friend from work.  I like cucumbers:

I think this is a typical asian technique–slice the cucumbers really thin and then liberally apply salt to "de-water" them.  It gives them a really good refreshing and crunchy texture.

Then I used them with some salmon in "Sake Sushi."

That picture has chopsticks so that you know that this dish is of the Asian persuasion.
